The Great Egg Debate: Fridge or No Fridge? Insights from Professional Chefs

Some households keep eggs in the fridge while others display them in egg baskets on their kitchen counters.

TV chef James Martin has revealed the surprising answer to whether eggs should be refrigerated or not.

Should eggs be kept in the fridge?

Martin shared on ITV’s This Morning that eggs should never be stored in the fridge or chilled.

He explained that egg shells are very porous and refrigeration could affect their quality.

Martin used two Victoria Sponge cakes, one made with hen eggs and the other with duck eggs, to illustrate his point on This Morning.

Keeping eggs in the fridge can cause them to “absorb all the flavours from the fridge,” such as strong-smelling cheese or garlic due to their porous shell.

While refrigeration can make eggs last longer, it is not recommended to cook them straight from the fridge.

Cooking eggs straight from the fridge could cause the shells to crack or affect the overall bake quality due to the sudden temperature change.
