TV chef James Martin has revealed the surprising answer to whether eggs should be refrigerated or not.

Martin shared on ITV’s This Morning that eggs should never be stored in the fridge or chilled.
He explained that egg shells are very porous and refrigeration could affect their quality.
Martin used two Victoria Sponge cakes, one made with hen eggs and the other with duck eggs, to illustrate his point on This Morning.
Keeping eggs in the fridge can cause them to “absorb all the flavours from the fridge,” such as strong-smelling cheese or garlic due to their porous shell.
British Lion Eggs, the ‘UK’s most successful food safety scheme,’ advises keeping eggs in the original carton to avoid absorbing flavors.
While refrigeration can make eggs last longer, it is not recommended to cook them straight from the fridge.
Cooking eggs straight from the fridge could cause the shells to crack or affect the overall bake quality due to the sudden temperature change.
